Smoky Beans for Sunny Days
Hi folks
I love a bit of kitchen magic, as you will know from my previous posts and cooking is a great way to stir up good intentions and sate hungry bellies. This month I’m sharing BBQ beans with you. This recipe serves four hungry people and leftovers can be eaten cold if it’s too hot to re-heat them. Minimal cooking and super quick to make, here it is:

Ingredients:
A jar of Organic Bold Bean Company White Beans (you could use a can of haricot as an alternative).
5 fresh tomatoes or a 400g Canned chopped tomatoes
200g passata (optional)
1 x small red onion
3 garlic cloves
1 x beef stock cube or suitable alternative
1.5tsp Worcestershire sauce
1tsp smoked paprika
2tsp oregano
1tbsp muscavado sugar
Salt & Pepper to taste
Method:
Take a heavy bottomed pan and fry the onion in olive oil on a medium heat for around 5 minutes. Add the tomatoes, crushed garlic cloves, passata (if using), the beans and the beef stock cube. Thoroughly combine for a couple of minutes, add a little water if needed and then add the remaining ingredients. Cook through on a medium to low heat for around ten minutes. The longer they simmer the better the taste, just make sure they don’t simmer dry.
I serve these with salad and sausages or homemade breaded chicken. If you are vegi, seasoned or smoky fried tofu would also work well with these.
